Automated equipment standardizes products, whereas semi-automated or manual processes can lead to variations that the market may or may not accept. As Latin American consumers look for higher-end products, they seek standardization.

Traditionally, in the States and Europe, supermarkets may account for 80% to 85% of grocery sales, in Latin America, depending on the country, it was more around 40% to 45% of the market.

In a manual process, to make 3,000 loaves per hour, you might need 20 or 25 people. In an automated process, you only need three or four.
